In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks.

Stir in the diced potatoes, chicken broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

Blend the Soup
Using an immersion blender, blend the soup until creamy and smooth. Alternatively, you can carefully transfer to a blender in batches.

Stir in the heavy cream and cannellini beans. Cook for an additional 5 minutes, allowing the flavors to meld.

Add the chopped kale and diced capicola. Cook for another 5 minutes until the kale is wilted and tender.
