Ice Cream Base

Ice Cream Preparation

    Make the Ice Cream Base

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is warm, stirring occasionally.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks and salt. Slowly add a little of the warm milk mixture to the egg yolks while whisking to temper them.

    Combine Mixtures

    Pour the egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Chill the Base

    Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate until completely chilled, at least 4 hours or overnight.

Flavoring the Ice Cream

    Prepare Flavors

    Divide the chilled ice cream base into three equal portions. In the first portion, mix in the chopped pistachios. In the second portion, fold in the cherry preserves and cherry extract. In the third portion, stir in the cocoa powder.

    Churn the Ice Cream

    Churn each of the three flavored bases in an ice cream maker according to the manufacturer's instructions until they reach a soft-serve consistency.

    Layer the Flavors

    In a loaf pan or ice cream container, layer the pistachio, cherry, and chocolate ice creams, creating swirls and layers.

    Freeze the Ice Cream

    Cover the container and freeze for at least 4 hours or until firm.

Rum Sauce Preparation

    Make the Rum Sauce

    In a saucepan, melt the butter over medium heat. Stir in the brown sugar until dissolved.

    Add Rum and Cream

    Gradually add the dark rum and heavy cream, whisking constantly. Bring the mixture to a simmer and cook for about 5 minutes until slightly thickened.

    Finish the Sauce

    Remove from heat and stir in the vanilla extract. Let it cool slightly before serving.
