Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and sugar. Pour in the melted butter and mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan evenly, creating a firm crust. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the sugar while continuing to beat until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing on low speed after each addition until just combined. Finally, add the flour and mix until just incorporated. Do not overmix.

Combine and Bake
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for about 60-70 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour. Afterward, remove from the oven and let it cool to room temperature.

Once cooled, cover the cheesecake and refrigerate for at least 4 hours, preferably overnight to set completely.

Serve
Once chilled, remove the cheesecake from the springform pan. Slice and serve plain, or drizzle with caramel sauce or chocolate drizzle if desired.
