Soup Preparation

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Zucchini and Garlic

    Stir in the diced zucchini and minced garlic. Cook for another 2-3 minutes until fragrant.

    Combine Base Ingredients

    Add the vegetable broth, canned diced tomatoes, cannellini beans, and Italian seasoning to the pot. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat and let the soup simmer for about 20 minutes, stirring occasionally. Season with salt and black pepper to taste.

    Add Spinach

    In the last 5 minutes of cooking, stir in the chopped spinach until wilted.

Au Gratin Upgrade Preparation

    Prepare the Cheese

    If you're opting for the Au Gratin Upgrade, preheat your oven to 400°F (200°C). Ladle the soup into oven-safe bowls.

    Add Cheese and Toast

    Top each bowl of soup with shredded mozzarella cheese. Place in the oven and bake for about 10 minutes, or until the cheese is bubbly and golden.

    Serve with Garlic Toast

    Serve the minestrone soup with garlic toast on the side for dipping.
