Pasta Preparation

Cook the Manicotti
In a large pot of salted boiling water, cook the manicotti shells according to package instructions until al dente. Drain and set aside to cool slightly.

Prepare the Cheese Filling
In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, chopped basil, salt, and black pepper. Mix until well combined.
Meat Sauce

Make the Meat Sauce
In a large skillet, cook the ground beef or sausage over medium heat until browned. Add the chopped onion and minced garlic, and sauté until the onion is translucent. Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and black pepper. Let simmer for 15-20 minutes.
Stuffing the Manicotti

Stuff the Pasta
Using a piping bag or a spoon, carefully stuff each manicotti shell with the cheese filling. Place the stuffed shells in a greased baking dish.
Assembly and Baking

Assemble and Bake
Pour half of the meat sauce over the stuffed manicotti, then sprinkle with the remaining mozzarella cheese. Pour the rest of the meat sauce on top. Cover with aluminum foil and bake in a preheated oven at 375°F (190°C) for 25-30 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
