Prepare the Chicken

Flatten the Chicken
Place each chicken breast between two sheets of plastic wrap and pound with a meat mallet until about 1/2 inch thick.

Bread the Chicken
Set up a breading station with three shallow dishes: one with flour (mixed with salt and pepper), one with beaten eggs, and one with bread crumbs. Dredge each chicken breast in flour, dip in egg, and coat with bread crumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side, until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Layer the Ingredients
Cut the submarine rolls in half. Place a fried chicken breast on the bottom half of each roll, spoon a generous amount of meat sauce over the chicken, and sprinkle with grated Romano cheese.

Melt the Cheese
Place the assembled subs under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Remove from the oven, garnish with fresh basil or parsley, and serve immediately.
