Chicken Parmigiana Recipe

7 oz. Chicken breast coated with spiced bread crumbs and baked. Topped with meat sauce, melted mozzarella and grated Romano cheese. Served with 2 slices of garlic bread, and your choice of side & starter.

Garlic Bread

Method

Prepare Chicken

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Chicken Breast

    Place the chicken breast between two pieces of plastic wrap and pound it to an even thickness of about 1/2 inch.

    Prepare Coating

    In a shallow bowl, combine the bread crumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.

    Coat Chicken

    In another bowl, beat the egg. Dip the chicken breast in the egg, allowing excess to drip off. Then coat it thoroughly in the breadcrumb mixture.

Bake Chicken

    Bake

    Place the coated chicken breast on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20 minutes or until the chicken is cooked through and golden brown.

Add Toppings

    Add Marinara Sauce

    Remove the chicken from the oven and spoon the marinara sauce evenly over the top of the chicken.

    Add Cheeses

    Sprinkle the shredded mozzarella and grated Romano cheese on top of the marinara sauce.

    Broil

    Return the chicken to the oven and broil for 3-5 minutes or until the cheeses are melted and bubbly.

Prepare Garlic Bread

    Mix Garlic Butter

    In a small bowl, mix the softened butter, minced garlic, and chopped parsley together.

    Spread on Bread

    Spread the garlic butter mixture evenly over the French bread slices.

    Toast Garlic Bread

    Place the garlic bread on a baking sheet and toast in the oven for about 5-7 minutes until golden and crispy.

Serve

    Plate and Serve

    Serve the baked Chicken Parmigiana with the garlic bread on the side, along with your choice of side and starter.
