Cannoli Shells

    Prepare the Dough

    In a mixing bowl, combine the flour, sugar, cocoa powder, and salt. Mix well. Add the softened butter and mix until crumbly.

    Add Wet Ingredients

    In a separate bowl, whisk together the egg yolks, wine (or vinegar), and water. Gradually add this mixture to the dry ingredients and knead until a smooth dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Roll and Cut the Dough

    After chilling, roll out the dough on a floured surface to a thickness of about 1/8 inch. Cut into circles (approximately 4 inches in diameter).

    Shape the Shells

    Wrap each dough circle around a cannoli tube, sealing the edges with a little water. Repeat until all dough is shaped.

    Fry the Shells

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes per side. Remove and drain on paper towels. Carefully remove the tubes while they are still warm.

Ricotta Filling

    Prepare the Filling

    In a mixing bowl, combine the drained ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.

    Add Chocolate Chips

    Fold in the chocolate chips and optional chopped pistachios until evenly distributed.

    Fill the Shells

    Using a piping bag or a spoon, fill each cannoli shell with the ricotta mixture. Ensure to fill both ends of the shell.

    Dust the filled cannoli with powdered sugar and top with chocolate shavings if desired.
