Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Cook the Cannelloni

    In a large pot, bring 4 cups of water and 1 tsp of salt to a boil. Add the cannelloni tubes and cook for about 8-10 minutes until slightly softened. Drain and set aside.

Filling

    Prepare the Filling

    In a large mixing bowl, combine ricotta cheese, fresh spinach, 1.5 cups of mozzarella cheese, 0.5 cups of parmesan cheese, 1 egg, nutmeg, black pepper, and 0.5 tsp of salt. Mix until well combined.

    Fill the Cannelloni

    Using a piping bag or a small spoon, carefully fill each cannelloni tube with the cheese and spinach mixture. Set aside.

Sauce

    Prepare the Marinara Sauce

    In a saucepan, heat 1 tbsp of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the marinara sauce and stir in the chopped fresh basil. Let it simmer for 5-7 minutes.

Assembly

    Assemble the Cannelloni Tray

    In a large baking dish, spread a thin layer of marinara sauce on the bottom. Place the filled cannelloni tubes in a single layer on top of the sauce. Pour the remaining marinara sauce over the cannelloni and sprinkle with 1 cup of shredded mozzarella cheese and 0.5 cups of grated parmesan cheese.

Baking

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

    Remove from the oven and let it rest for 5 minutes. Garnish with fresh basil leaves before serving.
