Manicotti

Method

Manicotti Preparation

  1. 1

    Cook the Manicotti

Bring a large pot of salted water to a boil. Add the manicotti and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

  2. 2

    Prepare the filling

In a large mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, egg, chopped basil, salt, and black pepper. Mix until well combined.

  3. 3

    Stuff the Manicotti

Using a piping bag or a spoon, carefully fill each manicotti sleeve with the cheese mixture.

  4. 4

    Assemble the dish

Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Place the stuffed manicotti on top of the sauce. Pour the remaining marinara sauce over the manicotti and sprinkle with the remaining mozzarella cheese.

  5. 5

    Bake

Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

Garlic Bread Preparation

  1. 6

    Prepare the garlic butter

In a bowl, mix softened butter, minced garlic, and chopped parsley until well combined.

  2. 7

    Spread on bread

Slice the baguette or Italian bread in half lengthwise. Spread the garlic butter mixture generously on each half.

  3. 8

    Bake the bread

Place the bread halves on a baking sheet and bake in the oven at 375°F (190°C) for about 10-12 minutes until the edges are golden and crispy.

Salad Preparation

  1. 9

    Prepare the salad

In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

  2. 10

    Make the dressing

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper to taste.

  3. 11

    Toss the salad

Drizzle the dressing over the salad and toss gently to combine.
