Pasta

Method

Cooking the Pasta

  1. 1

    Boil Water

Fill a large pot with water and add a generous pinch of salt. Bring the water to a rolling boil over high heat.

  2. 2

    Add Fettucine

Once the water is boiling, add the 8 lb of fettucine. Stir gently to prevent the pasta from sticking together.

  3. 3

    Cook Pasta

Cook the fettucine according to package instructions, typically around 8-10 minutes, until al dente. Stir occasionally.

  4. 4

    Drain Pasta

Once cooked, reserve 1 cup of pasta water and then drain the fettucine in a colander.

Making the Sauce

  1. 5

    Heat Olive Oil

In a large skillet over medium heat, add 0.5 cups of olive oil and heat until shimmering.

  2. 6

    Add Garlic

Add the minced garlic to the skillet and sauté for about 1-2 minutes, or until it becomes fragrant and golden brown.

  3. 7

    Add Heavy Cream

Pour in 2 cups of heavy cream, stirring to combine with the garlic and oil. Bring to a gentle simmer.

  4. 8

    Add Cheese and Season

Stir in 1 cup of grated Parmesan cheese, 1 tsp of salt, and 0.5 tsp of black pepper. Mix well until the cheese has melted and the sauce is creamy.

  5. 9

    Combine Pasta and Sauce

Add the drained fettucine to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.

Finishing Touches

  1. 10

    Garnish and Serve

Remove from heat and sprinkle 0.5 cups of chopped fresh parsley over the pasta. Toss gently and serve immediately.
