Rinse the fresh spinach under cold water and remove any tough stems. In a large pot, bring water to a boil, add the spinach, and blanch for about 2 minutes. Drain and cool in ice water, then squeeze out excess moisture and chop finely.

In a large mixing bowl, combine the ricotta cheese, chopped spinach, grated Parmesan cheese, egg, nutmeg, salt, and black pepper. Mix until well combined and set aside.

Add the tomato sauce, dried basil, salt, and black pepper to the saucepan. Stir well and let simmer for about 10 minutes, allowing the flavors to meld. Adjust seasoning as needed.

Stuff the Cannelloni
Using a piping bag or a spoon, carefully fill each cannelloni tube with the ricotta and spinach filling. Set aside.
