Cook the Pasta
Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced onions, bell peppers, and mushrooms. Sauté until softened, about 5-7 minutes.

Cook the Veal
Season the veal cutlets with salt, black pepper, and Italian seasoning. Push the vegetables to the side of the skillet and add the veal. Cook for about 3-4 minutes on each side until browned.

Combine with Sauce
Pour the homemade tomato sauce over the veal and vegetables in the skillet. Simmer for about 5 minutes to allow flavors to meld.

Add Cheese
Sprinkle shredded provolone cheese over the top of the veal and cover the skillet to melt the cheese, about 2-3 minutes.

Serve
Serve the veal pizzeola over the cooked pasta, garnished with additional Italian seasoning if desired.
