1. Prepare the Pasta
Cook the pasta according to package instructions until al dente, then drain and set aside.
2. Cook the Chicken
In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and slice.
3. Sauté Vegetables
In the same skillet, add sliced onions, bell peppers, and mushrooms. Sauté for 5-6 minutes until the vegetables are tender. Add minced garlic and cook for an additional minute.
4. Add Sauce
Pour in the tomato sauce and stir to combine. Allow to simmer for 5 minutes, then stir in the sliced chicken.
5. Combine and Serve
Add the cooked pasta to the skillet and toss to coat in the sauce. Top with provolone cheese and cover the skillet until the cheese melts (about 2-3 minutes). Serve hot.
