    Prepare the Veal

    Season the veal medallions with salt and black pepper on both sides.

    Sear the Veal

    In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Add the veal medallions and cook for about 3-4 minutes on each side until browned. Remove the medallions from the skillet and set aside.

    Sauté the Mushrooms

    In the same skillet, add another tablespoon of olive oil and the sliced mushrooms. Sauté until the mushrooms are browned and have released their moisture, about 5-7 minutes. Add the minced garlic and cook for an additional minute.

    Make the Sauce

    Pour in the Marsala wine, scraping the bottom of the pan to deglaze. Allow the wine to reduce by half, about 5 minutes.

    Combine and Finish

    Return the veal medallions to the skillet, spooning the sauce over them. Cook for another 2-3 minutes until the veal is heated through. Stir in the remaining butter and chopped parsley before serving.
