Cook the Pasta
In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

Prepare the Veal
Season the veal cutlets with salt and pepper on both sides.

Sauté the Veal
In a large skillet, heat olive oil over medium-high heat. Add the veal cutlets and cook for about 3-4 minutes on each side, until cooked through and golden brown. Remove from skillet and set aside.

Sauté the Spinach
In the same skillet, add the fresh spinach and sauté until wilted, about 2-3 minutes.

Assemble the Dish
In a baking dish, layer the cooked pasta, followed by the sautéed spinach, and then place the veal cutlets on top. Pour the homemade tomato sauce over the veal and top with provolone cheese.

Bake
Preheat the oven to 375°F (190°C). Bake the assembled dish for 15-20 minutes, or until the cheese is melted and bubbly.

Remove from the oven and allow to cool for a few minutes before serving. Enjoy your Veal Florentine!
