Prepare the Vegetables
Preheat your oven to 400°F (200°C). Slice the red and yellow bell peppers into strips and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for 20 minutes until tender.

Cook the Steak
While the peppers are roasting, season the NY sirloin steak with salt and black pepper. Heat a skillet over medium-high heat with a little olive oil. Cook the steak for 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

Combine Ingredients
In a large bowl, combine the roasted peppers, sliced black olives, artichoke hearts, and balsamic vinegar. Toss gently to mix.

Slice the steak against the grain and plate it. Top the steak with the roasted pepper and olive mixture. Garnish with fresh parsley before serving.
