Directions
- 1
Prepare the Shrimp
In a shallow dish, season the shrimp with salt and black pepper. Dredge each shrimp lightly in flour, shaking off the excess.
- 2
Make the Egg Mixture
In another bowl, whisk together the eggs and grated Parmesan cheese until well combined.
- 3
Dip the Shrimp
Dip each floured shrimp into the egg mixture, ensuring they are well coated.
- 4
Sauté the Shrimp
In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side until golden brown. Remove the shrimp from the skillet and set aside.
- 5
Make the Sauce
In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant. Pour in the white wine and chicken broth, scraping the bottom of the pan to deglaze. Cook for about 5 minutes until the sauce reduces slightly.
- 6
Finish the Dish
Stir in the lemon juice and return the shrimp to the skillet. Cook for an additional 2 minutes to heat through. Garnish with fresh parsley before serving.
