    Making the Cannoli Shells

    In a large bowl, combine flour, sugar, cocoa powder, and salt. Add the butter and mix until crumbly. Stir in egg yolk, wine (or vinegar), and water until a dough forms. Knead for a few minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Frying the Cannoli Shells

    Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a cookie cutter. Wrap the circles around cannoli forms and seal the edges with water. Heat the vegetable oil in a deep pan to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Drain on paper towels and let cool.

    Preparing the Ricotta Filling

    In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix well until smooth. Fold in chocolate chips.

    Once the shells are cooled, carefully remove them from the forms. Using a pastry bag, fill the shells with the ricotta mixture. Dust with powdered sugar and garnish with chopped pistachios before serving.
