    Prepare the Vegetables

    Slice the onion, bell pepper, and mushrooms into thin strips.

    Season the Steak

    Rub the NY sirloin steak with olive oil, salt, black pepper, and garlic powder. Let it sit at room temperature for about 15 minutes.

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers. Sauté for about 5 minutes until they start to soften. Add the mushrooms and continue to sauté for another 5 minutes, or until all vegetables are tender. Remove from skillet and set aside.

    Cook the Steak

    In the same skillet, add another tablespoon of olive oil and increase the heat to medium-high. Add the seasoned NY sirloin steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Use a meat thermometer if needed (130°F for medium-rare).

    Serve

    Once the steak is cooked to your liking, remove from heat and let it rest for a few minutes. Slice the steak against the grain and serve topped with the sautéed vegetables.
