Prepare the Ingredients
Rinse the flounder fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Set up the Dipping Stations
In one shallow dish, place the flour. In another dish, whisk together the eggs and milk until well combined.

Dredge the Flounder
Dip each flounder fillet first into the flour, coating both sides, then into the egg mixture, allowing excess to drip off.

Cook the Flounder
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the flounder fillets and cook for about 3-4 minutes on each side until golden brown. Remove from the skillet and keep warm.

Make the White Sauce
In the same skillet, add the white wine and chicken broth. Bring to a simmer and scrape any browned bits from the bottom. Stir in the lemon juice and remaining butter. Cook for an additional 2-3 minutes until slightly thickened.

Serve
Plate the flounder fillets and drizzle the white sauce over them. Garnish with freshly chopped parsley and serve immediately.
