Cook the Pasta
Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced onions, bell pepper, and mushrooms. Sauté for about 5-7 minutes until the vegetables are softened.

Cook the Chicken
Season the chicken breasts with salt and black pepper. Push the sautéed vegetables to the side of the skillet and add the chicken to the pan. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden color.

Add Tomato Sauce
Pour the homemade tomato sauce over the chicken and vegetables. Let it simmer for about 5 minutes to heat through.

Melt the Cheese
Sprinkle the provolone cheese over the chicken and cover the skillet with a lid. Allow the cheese to melt for about 2-3 minutes.

Serve
Serve the chicken breasts over a bed of pasta, spooning the sauce, vegetables, and melted cheese on top.
