Preparation and Cooking Directions
- 1
Make the Ravioli Dough
In a large mixing bowl, combine flour and salt. Create a well in the center and add the eggs. Mix until a dough forms. Knead on a floured surface for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- 2
Prepare the Filling
In a bowl, mix together ricotta cheese, grated Parmesan cheese, shredded mozzarella cheese, and a pinch of salt. Set aside.
- 3
Roll Out the Dough
After resting, divide the dough into quarters. Roll out each piece into thin sheets using a pasta machine or rolling pin, dusting with flour to prevent sticking.
- 4
Assemble the Ravioli
Place small spoonfuls of the cheese filling on one sheet of pasta, spacing them about 2 inches apart. Moisten the edges with water, then place another sheet of pasta on top. Press down to seal and cut into squares.
- 5
Cook the Ravioli
Bring a large pot of salted water to a boil. Add ravioli and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

- 7
Combine and Serve
Serve the ravioli topped with the homemade tomato sauce. Optionally, add cooked meatballs or sausage on top.
