Cheesecake Filling

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine chocolate graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes, then remove and let cool.

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add in sugar, vanilla extract, and sour cream, mixing until combined. Add the eggs one at a time, mixing on low speed until just blended. Pour the cheesecake filling over the cooled crust.
