Veal Piccata Ingredients

Method

Cooking Directions

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

  2. 2

    Prepare the Veal

Season the veal cutlets with salt and black pepper. Dredge them in flour, shaking off the excess.

  3. 3

    Sauté the Veal

In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the veal cutlets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the veal from the skillet and set aside.

  4. 4

    Make the Sauce

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the white wine and bring to a simmer, scraping any brown bits from the bottom of the skillet. Simmer for about 2-3 minutes.

  5. 5

    Finish the Sauce

Stir in the lemon juice, capers, and the remaining butter. Allow the sauce to simmer for another 2 minutes.

  6. 6

    Combine and Serve

Return the veal to the skillet, coating it in the sauce. Serve the veal piccata over the cooked pasta, garnished with chopped parsley. If needed, add a little reserved pasta water to the sauce for consistency.
