    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel. Ensuring they are dry prevents oil splatter during frying.

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a candy thermometer to check the temperature.

    Carefully add a handful of potatoes to the hot oil, being cautious not to overcrowd the pot. Fry the potatoes in batches for about 4-5 minutes or until they are golden brown.
