    Make the Pasta Dough

    In a large bowl, mix the flour and salt. Create a well in the center, crack the eggs into the well, and gradually incorporate the flour until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Cheese Filling

    In a medium bowl, combine ricotta, mozzarella, Parmesan, egg yolk, salt, and pepper. Mix until well combined and set aside.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin, dusting with flour as needed to prevent sticking.

    Assemble the Ravioli

    Place teaspoons of the cheese filling on one sheet of rolled-out dough, leaving space between each. Dampen the edges of the dough with water, place another sheet of dough over the filling, and press down to seal. Cut into squares or circles with a knife or pasta cutter.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.
