Preparation
- 1
Make the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
- 2
Prepare the Filling
In a mixing bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth. Pour the filling into the cooled crust and spread evenly.
- 3
Bake the Pie
Bake in the preheated oven for 15-18 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool at room temperature.
- 4
Chill the Pie
Once cooled, refrigerate the pie for at least 3 hours or until completely chilled.
- 5
Make the Topping
In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form. Fold in the lime zest.
- 6
Serve
Spread or pipe the whipped cream topping over the chilled pie. Slice and serve cold.
