    Prepare the Potatoes

    Boil the russet potatoes in salted water until fork-tender, about 20-25 minutes. Drain and let them cool slightly before peeling.

    Make the Dough

    Pass the peeled potatoes through a potato ricer or mash them until smooth. In a large bowl, combine the mashed potatoes, flour, egg, salt, and nutmeg. Mix until a dough forms.

    Shape the Gnocchi

    On a floured surface, divide the dough into four portions. Roll each portion into a rope about 1/2 inch thick. Cut the rope into 1-inch pieces, and use a fork to press down lightly on each piece to create ridges.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi in batches, cooking until they float to the surface, about 2-4 minutes. Remove with a slotted spoon and drain.

    Serve

    In a skillet, heat olive oil over medium heat. Add the cooked gnocchi and sauté until golden brown. Serve topped with grated Parmesan cheese.
