Base Ingredients

Method

Preparation

  1. 1

    Make the Gelato Base

In a medium saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves.

  2. 2

    Whisk Egg Yolks

In a separate bowl, whisk together the egg yolks. Slowly pour in the warm milk mixture, whisking constantly to temper the yolks.

  3. 3

    Cook the Mixture

Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.

  4. 4

    Add Vanilla

Remove from heat and stir in the vanilla extract. Let it cool down to room temperature.

Flavoring

  1. 5

    Incorporate Flavors

Divide the base into separate bowls for each flavor. Add the respective flavoring ingredients to each bowl and mix well.

  2. 6

    Chill

Cover each bowl and refrigerate for at least 4 hours or overnight.

Churning

  1. 7

    Churn in Ice Cream Maker

Pour each flavor into an ice cream maker and churn according to the manufacturer’s instructions until thick and creamy.

  2. 8

    Freeze Gelato

Transfer gelato to airtight containers and freeze for at least 2 hours before serving.
