Cooking Instructions

  1. 1

    Preparing the Pasta

Cook the pasta according to the package instructions. Drain and set aside.

  2. 2

    Cooking the Filet

Season the filet mignon with salt and pepper. Heat olive oil in a grill pan over medium-high heat. Grill the filets for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

  3. 3

    Making the Port Wine Sauce

In the same pan, add minced garlic and sauté for 1 minute. Add mushrooms and cook until softened, about 3-4 minutes. Stir in sun-dried tomatoes and spinach, cooking until the spinach wilts. Pour in port wine and let it simmer until reduced by half, approximately 5-7 minutes.

  4. 4

    Combining with Marinara

In a separate pot, heat the marinara sauce until warmed through. Combine cooked pasta with marinara sauce and toss to coat.

  5. 5

    Plating the Dish

On each plate, serve a portion of the pasta marinara, topped with the grilled filet and drizzled with the port wine sauce. Serve immediately.
