    Prepare the Eggplant

    Slice the eggplants into 1/4 inch thick rounds. Sprinkle salt over the slices and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.

    Bread the Eggplant

    Dredge each eggplant slice in flour, shaking off excess. Heat olive oil in a large skillet over medium heat and fry the eggplant slices until golden brown on both sides. Drain on paper towels.

    Prepare the Cheese Filling

    In a bowl, mix ricotta cheese, black pepper, and fresh basil until well combined.

    Layer the Ingredients

    Preheat the oven to 375°F (190°C). In a baking dish, spread a thin layer of marinara sauce. Layer fried eggplant slices, followed by dollops of the ricotta mixture, and a sprinkle of mozzarella cheese. Repeat the layering, finishing with marinara sauce and a generous sprinkle of Parmesan cheese on top.

    Bake the Eggplant Parmigiana

    Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is bubbly and golden.

    Let the dish cool for a few minutes before slicing. Serve warm, garnished with fresh basil if desired.
