Filling and Pasta
Method
Pasta and Sauce Preparation
- 1
- 2
Prepare the Filling
In a bowl, combine ricotta cheese, fresh crabmeat, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- 3
Roll Out the Pasta
Divide the dough into quarters. Roll out each quarter into thin sheets using a pasta machine or rolling pin, dusting with flour to prevent sticking.
- 4
Stuff the Ravioli
Place a teaspoon of filling on one sheet of pasta, leaving space between each. Moisten the edges with water, then fold the sheet over to create a pocket. Press to seal, ensuring no air is trapped inside. Cut between the ravioli to separate.
- 5
Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes or until they float to the top. Remove with a slotted spoon and set aside.
- 6
Make the Lobster Cream Sauce
In a saucepan, melt butter over medium heat. Add shrimp and scallops, cooking until opaque. Stir in heavy cream and lobster stock, simmer for 5 minutes. Season with salt and pepper to taste.
- 7
Combine and Serve
Add the cooked ravioli and peapods to the sauce, tossing gently to combine. Serve hot with additional crabmeat if desired.
