Prepare the Bread
Preheat your oven to 350°F (175°C). Cut the stale bread into cubes and place them in a large mixing bowl.

Mix Wet Ingredients
In another bowl, whisk together the whole milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, and salt until well combined.

Combine Ingredients
Pour the wet mixture over the bread cubes and gently fold in the chocolate chips. Let it sit for about 15 minutes to allow the bread to soak up the mixture.

Bake the Pudding
Transfer the mixture into a greased baking dish and bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

Brandy Cream Sauce
While the bread pudding is baking, prepare the brandy cream sauce by combining 1 cup of heavy cream, 1/4 cup of brandy, and 2 tablespoons of sugar in a saucepan over medium heat. Stir until the sugar has dissolved and the sauce is warm.

Serve
Once the bread pudding is done, serve it warm topped with a scoop of vanilla gelato and drizzled with the brandy cream sauce.
