Cooking Instructions

  1. 1

    Prepare the Ingredients

Dice the potatoes and slice the bell peppers into strips. Mince the garlic and chop the rosemary.

  2. 2

    Sauté the Chicken

In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and sauté until golden brown on both sides, about 5-7 minutes per side. Remove the chicken and set aside.

  3. 3

    Cook the Vegetables

In the same skillet, add the garlic and cook for 1 minute until fragrant. Add the sliced bell peppers and diced potatoes. Sauté for about 5 minutes until the vegetables start to soften.

  4. 4

    Add Liquid

Pour in the white wine and chicken broth, scraping the bottom of the skillet to release any browned bits. Stir in the rosemary.

  5. 5

    Combine and Simmer

Return the chicken to the skillet, nestling it among the vegetables. Reduce the heat to low, cover, and simmer for 20-25 minutes or until the chicken is cooked through and the potatoes are tender.

  6. 6

    Serve

Taste and adjust the seasoning with salt and pepper if necessary. Serve hot, spooning the sauce and vegetables over the chicken.
