Cooking Instructions
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.
- 2
Sear the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear until golden brown, about 5-7 minutes per side. Remove the chicken and set aside.
- 3
Make the Sauce
In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in the white wine and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- 4
Add Remaining Ingredients
Stir in the capers, diced tomatoes, and fresh basil. Return the chicken breasts to the skillet and spoon some of the sauce over them. Cover and cook for an additional 10 minutes, allowing the chicken to absorb the flavors.
- 5
Melt the Cheese
Sprinkle the shredded mozzarella over the chicken, cover again, and let it melt for about 2-3 minutes.
- 6
Prepare the Vegetables
While the chicken is cooking, steam or sauté the mixed vegetables in a separate pan until tender.
- 7
Serve
Plate the chicken with the sauce on top and serve alongside the mixed vegetables.
