Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Dredge each breast in flour, dip in beaten eggs, and coat with breadcrumbs.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Transfer to a baking dish and bake in the preheated oven for 15-20 minutes or until cooked through.

Prepare the Sauce
In the same skillet, add minced garlic and sauté until fragrant. Pour in the white wine and bring to a simmer. Add the giardiniera and cook for an additional 5 minutes, allowing the flavors to meld.

Cook the Pasta
While the chicken is baking, cook the pasta according to package instructions until al dente. Drain and set aside.

Combine and Serve
Once the chicken is cooked, slice it and arrange over the pasta. Spoon the giardiniera-olive mix and white wine sauce over the top. Garnish with chopped parsley and serve immediately.
