Prepare the Pasta
In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper. Add to the skillet and sauté until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and let rest before slicing.

Make the Sauce
In the same skillet, add roasted garlic and chopped tomatoes. Sauté for about 3-4 minutes until the tomatoes are softened. Pour in the white wine and let it simmer for about 5 minutes, allowing the alcohol to cook off and the sauce to reduce slightly.

Combine Ingredients
Add the sliced chicken back to the skillet along with the cooked rotini and fresh basil. Toss everything together until well combined. Adjust seasoning with salt and pepper to taste.

Serve
Plate the Chicken Armenta and garnish with additional fresh basil if desired. Serve warm.
