    Make the Pasta Dough

    In a large mixing bowl, combine flour and salt. Create a well in the center and add eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Cheese Filling

    In a bowl, mix together ricotta, Parmesan, mozzarella, egg yolk, parsley, salt, and pepper until well combined.

    Roll Out the Dough

    Divide the dough into four pieces. Roll out one piece at a time on a floured surface until very thin (about 1/8 inch thick).

    Fill the Ravioli

    Place a teaspoon of cheese filling about 2 inches apart on the rolled-out dough. Moisten the edges with water, fold the dough over, and press to seal. Cut out ravioli using a pasta cutter or knife.

    Make the Marinara Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in crushed tomatoes, oregano, salt, and pepper. Simmer for 20 minutes. Stir in fresh basil just before serving.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook ravioli in batches for about 4-5 minutes or until they float to the top. Remove with a slotted spoon.

    Serve

    Plate the ravioli and top with marinara sauce. Garnish with additional basil and Parmesan if desired.
