Make the Dough
In a large bowl, combine the flour, sugar, cocoa powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg yolk and wine (or vinegar) until the dough comes together. Wrap in plastic wrap and refrigerate for at least 1 hour.

Roll and Cut
On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles or ovals (about 4-5 inches in diameter).

Shape the Shells
Wrap each dough circle around a metal cannoli tube, sealing the edges with a little water. Ensure they are tightly wrapped.

Fry the Shells
Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool slightly before removing the tubes.
