    Prepare the Butternut Squash

    Preheat the oven to 400°F (200°C). Cut the butternut squash in half and remove the seeds. Place the halves cut side down on a baking sheet and roast for about 30-35 minutes or until tender. Allow to cool, then scoop out the flesh and mash it.

    Make the Dough

    In a large bowl, combine the mashed butternut squash, mashed potatoes, flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add more flour as needed.

    Shape the Gnocchi

    Divide the dough into several portions. Roll each portion into a long rope (about ½ inch thick) and cut into 1-inch pieces. You can use a fork to create grooves if desired.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Drop the gnocchi into the water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
