Bruschetta

Toasted Cheese Ravioli

Method

Bruschetta

  1. 1

    Prepare the Topping

Dice the Roma tomatoes and chop the fresh basil. Mince the garlic and combine everything in a bowl with balsamic vinegar, olive oil, salt, and pepper.

  2. 2

    Toast the Bread

Slice the baguette into 1/2 inch slices. Toast the slices in the oven at 400°F (200°C) for about 5-7 minutes until lightly golden.

  3. 3

    Assemble

Top each toasted baguette slice with the tomato mixture and serve immediately.

Calamari Fritti

  1. 4

    Prepare the Batter

In a bowl, combine flour, cornstarch, salt, pepper, and paprika. In another bowl, whisk together the egg and milk.

  2. 5

    Coat Calamari

Dip the calamari rings into the egg mixture, then dredge in the flour mixture until fully coated.

  3. 6

    Fry the Calamari

Heat vegetable oil in a deep fryer or a heavy pot to 375°F (190°C). Fry the calamari in batches until golden brown, about 2-3 minutes. Drain on paper towels.

  4. 7

    Serve

    Serve hot with lemon wedges.

Toasted Cheese Ravioli

  1. 8

    Prepare the Ravioli

Boil the frozen cheese ravioli according to package instructions until al dente. Drain and let cool.

  2. 9

    Coat Ravioli

Set up a breading station: flour on one plate, beaten egg on another, and breadcrumbs mixed with Parmesan on a third. Dredge each ravioli in flour, dip in egg, then coat with breadcrumbs.

  3. 10

    Toast the Ravioli

In a skillet, heat olive oil over medium heat. Fry the ravioli until golden brown on both sides, about 3-4 minutes. Drain on paper towels.

  4. 11

    Serve

Serve warm with marinara sauce for dipping.
