Brewing Instructions

Mashing
Heat the water to 160°F (71°C) and add the pale malt, flaked oats, and caramel malt. Maintain the temperature for 60 minutes.

Sparging
After mashing, sparge with 170°F (77°C) water to collect the wort.

Boiling
Bring the wort to a boil and add Citra hops. Boil for 60 minutes, adding Mosaic hops at the 15-minute mark and Simcoe hops at the 5-minute mark.

Cooling and Fermentation
Cool the wort rapidly to 70°F (21°C) and transfer it to a fermentation vessel. Pitch the yeast and seal it. Let it ferment for 1-2 weeks.

Bottling
After fermentation, dissolve priming sugar in a small amount of water and add to the beer. Bottle the beer and let it condition for an additional 2 weeks.
