Preparation and Assembly

    Make the Chocolate Cake

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes.

    Stir in the boiling water (batter will be thin). Pour the batter evenly into the prepared pans.

    Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Cool in the pans for 10 minutes, then remove from pans to cool completely on wire racks.

    Prepare the Belgian Chocolate Mousse

    In a medium bowl, whip the heavy cream until soft peaks form.

    In another bowl, melt the Belgian chocolate. Let it cool slightly before folding it into the whipped cream along with powdered sugar until combined.

    Assemble the Cake

    Once cakes are completely cooled, place one layer on a serving plate. Spread half of the chocolate mousse over the first layer.

    Top with the second layer and repeat with the remaining mousse.

    Prepare the Ganache and Finish

    In a small saucepan, heat heavy cream until just boiling. Pour over chopped dark chocolate and let sit for 5 minutes. Stir until smooth.

    Pour the ganache over the top of the cake, letting it drip down the sides. Drizzle with chocolate syrup and add whipped cream as desired.
