    Prepare the Jalapenos

    Slice the jalapeno peppers in half lengthwise and remove the seeds for less heat, if desired. Cut them into spears.

    Make the Batter

    In a bowl, whisk together the flour, cornmeal, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, whisk together the eggs and milk.

    Coat the Jalapeno Spears

    Dip each jalapeno spear into the egg mixture, then coat it in the flour mixture, pressing lightly to ensure it sticks.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Jalapeno Spears

    Fry the coated jalapeno spears in batches for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Serve

    Serve the Texas Toothpicks hot with ranch dressing and extreme ranch on the side for dipping.
