Prepare the Steak
Season the sirloin steak with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing it thinly.

Cook the Vegetables
In the same pan, add the remaining tablespoon of olive oil. Sauté the sliced onions over medium heat until they become caramelized, about 8-10 minutes. Add the mushrooms and cook for an additional 5 minutes until they are tender.

Assemble the Sandwiches
Slice the hoagie rolls in half and place them on a baking sheet. Layer the sliced steak, followed by the sautéed onions and mushrooms. Pour the queso cheese sauce generously over the top.

Bake and Serve
Preheat the oven to 350°F (175°C). Bake the assembled hoagie rolls for about 5-7 minutes, or until the cheese is bubbly. Serve hot.
