    Mashing

    Combine the corn, rye, and barley in a large mash tun. Heat water to approximately 165°F (74°C) and mix with the grains. Maintain the temperature for about 2 hours to allow the starches to convert to sugars.

    Cooling

    Cool the mash to about 70°F (21°C) before adding yeast.

    Fermentation

    Add the yeast to the cooled mash and allow it to ferment for about 5-7 days, until bubbling stops.

    Distillation

    Transfer the fermented mash to a still and distill it. Collect the distillate, focusing on the heart cut for the best flavor.

    Aging

    Transfer the distilled spirit to new American oak barrels. Age for at least 2 years, but preferably 4-6 years to develop the desired caramel and oak finish.

    Bottling

    Once aged, the bourbon can be filtered and bottled. Store in a cool, dark place.
