    Prepare the Roast

    Preheat your oven to 300°F (150°C). In a small bowl, mix together garlic powder, onion powder, black pepper, and salt. Rub this mixture all over the beef roast.

    Roast the Beef

    Place the seasoned beef roast in a roasting pan. Pour the beef broth into the pan. Cover with foil and roast in the oven for about 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Rest the Roast

    Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

    Slice the Beef

    Thinly slice the roast beef against the grain using a sharp knife.

    Prepare Kimmelweck Rolls

    While the beef is resting, you can warm the kimmelweck rolls in the oven for about 5 minutes.

    Assemble the Sandwich

    Pile the sliced roast beef high on the kimmelweck rolls. Serve with au jus for dipping, alongside fries and pickles.
