    Prepare the Dough

    In a large bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until it becomes frothy. Add salt and flour, mixing until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

    Shape the Pretzels

    Preheat your oven to 450°F (230°C). Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a long stick shape, about 10-12 inches long.

    Prepare the Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully drop each pretzel stick into the boiling water for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Bake the Pretzels

    Sprinkle the pretzel sticks with coarse sea salt and bake in the preheated oven for 12-15 minutes or until golden brown.
