    Activate the Yeast

    In a small bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine the flour, sugar, and salt. Add the yeast mixture and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pretzel Sticks

    Preheat the oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long stick, about 10-12 inches long.

    Prepare Baking Soda Bath

    In a large pot, bring 8 cups of water and the baking soda to a boil. Carefully drop each pretzel stick into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

    Beat the egg in a small bowl. Brush each pretzel stick with the egg wash and sprinkle with coarse sea salt.
